Cooking is one of my favorite activities to do with my daughter. Here are a few quick recipes for dads who want to spend some time in the kitchen with their children and cook up some meals and memories.
Bacon and Grilled Mac N Cheese
2 slices ciabatta bread
1-1/2 tablespoons butter
About 1/3 cup cheddar mac and cheese
1 slice provolone cheese
2 pieces bacon
Preheat a griddle or panini press.
Butter both slices of bread. Layer the cheese, mac and cheese and bacon on 1 bread slice. Top with the second piece of bread and slightly push them together.
Place sandwich on the grill press and press it down. Cook the sandwich until both sides are golden brown and cheese is melted.
1. Spread the softened cookie dough into a lightly greased pizza pan, flattening it to the edges.
2. Bake at 350 degrees for 8-10 minutes until it begins to brown SLIGHTLY.
3. Remove the cookie from the oven and sprinkle the top with with the chocolate chips, graham crackers and marshmallows.
4. Return the cookie to the oven for 5-8 minutes until crust is brown and chips and marshmallows are melted.
5. Allow to cool slightly before serving.
6. Garnish with chocolate syrup, if desired
Baked Penne Pasta Skillet
1package (1 lb) penne pasta
1jar (24 oz) marinara sauce
1jar (14.5 oz) Alfredo sauce
2cups shredded mozzarella cheese (8 oz)
Heat oven to 350°F. Lightly spray bottom of 12-inch cast-iron skillet with cooking spray.
In stockpot or Dutch oven, cook pasta to al dente as directed on package.
In large bowl, stir together both sauces and 1 cup of the cheese. Add cooked pasta; stir gently to combine. Pour into skillet.
Bake 25 minutes. Sprinkle remaining cup of cheese over top; bake 5 to 7 minutes longer or until cheese is bubbly. Serve immediately.
Chicken And Waffle Sliders
frozen mini waffles
chicken tenders or popcorn chicken, cooked
Slice cooked chicken fingers into 3-4 pieces. Break mini waffles apart
Sandwich 1 piece of chicken between 2 mini waffles. Secure with a toothpick and drizzle with warm maple syrup
Kickin’ BBQ Chicken Quesadilla
2 ounces chopped roasted chicken breast
3 tablespoons grated Mexican-blend cheese
1 tablespoon barbecue sauce $
1 tablespoon diced red onion $
1/4 teaspoon crushed red pepper
1 tablespoon chopped fresh cilantro $
2 (6-inch) flour tortillas
Place first 6 ingredients on 1 tortilla; top with second tortilla. Heat a skillet over medium-high heat.
Coat pan with cooking spray.
Add quesadilla to pan; cook 1 minute on each side or until golden.
